Beef Chuck Roast: Delicious, Affordable Meal Prep Steak!
You DO NOT have to pay oodles of money or spend precious time cooking delicious steak!
The answer is YES, my friends.
The question? Can I have delicious steak flavor without spending time cooking every day?
Whether we're talking Weight Watchers, Keto, simple portion control, or dinner for the family on the fly, adding this beef chuck roast recipe to your DIY chef arsenal (along with GABC seasonings of course!) will make your life easier. And to top it off, you'll get a flavor packed meal no matter your culinary capacity.
What you will need:
- One beef chuck roast, approximately 2.5 to 3 lbs.
Using a chuck roast this size can yield about 5 to 10 portions, depending on how big of a piece you use for each person/meal. Your local grocery store or meat market has them, I promise :-)
- GABC Every Purpose Seasoning and Original Beef Rub
- An oven, or a grill, or a smoker (3 options explained below)
- A decent digital meat probe
- A healthy appetite for hearty beef flavor!
There are 3 ways that I like to use for my chuck roasts, depending on my mood and how much time I have for the day. I'll happily walk you through each!
Meat Prep (same for each method of cooking):
- Place your thawed chuck roast on a baking sheet (I like to line mine with foil or parchment paper, then place a cooling rack in the pan for better seasoning coverage and easier cleaning)
- Season the bottom, sides and top with a liberal coating pf Arch City Every Purpose Seasoning
- Season the bottom, sides and top with a light/moderate dusting of Arch City Original Beef Rub
- Empty excess seasoning into the trash (don't reuse seasoning that has already touched raw meat)
- Let the flavors sink in while get ready to cook in your chosen style!
On the Grill (fastest):
*This method can take anywhere from 20 to 30 minutes from prep to portioning (longer for a charcoal grill of course)
You're gonna get a great beef flavor mixed with flame and char!
- Heat your grill to around 600°
- Lay your chuck roast directly on the center of the grill and close the lid
- Cook for 2 minutes, and do a 1/4 turn (not a flip)
- Cook for 2 more minutes and flip
- Cook for 2 more minutes, then another 1/4 turn (not a flip)
- Cook for another 2 minutes then move to indirect heat, such as turning half of the burners off and moving the meat to the end without flames
- Continue cooking until you reach an internal temperature of about 125° (at this stage you can spray a light dusting of extra virgin olive oil spray onto your chuck roast to help with char and flavor)
- Remove and let the chuck roast rest on a plate for 10 to 20 minutes to cool and finish cooking
- Slice into portions and you're done!
In the oven (simplest):
You're gonna get a delicious roasted beef flavor with some added sear taste from the higher temperature and olive oil!
- Heat your oven to 500° or its maximum temperature (high temp helps get a good crisp outside, you'll just need to cook a little longer for lower temps)
- Place the baking sheet with your chuck roast on a rack close to the top of your oven (make sure you have room for this hunk of flavor filled meat!)
- If you used a baking pan and cooling rack, be sure to line it with foil (don't want burned parchment paper!)
- Cook for about 20 minutes, then check the internal temperature
- Continue to check until the chuck roast reaches approximately 115° internal temperature
- Spray lightly with extra virgin olive oil cooking spray to help finish the outer sear (don't start with oil or your meat will be an ugly gray no matter what you do)
- Finish cooking the chuck roast to an internal temperature of 125°
- Remove and let the chuck roast rest on a plate for 10 to 20 minutes to cool and finish cooking
- Slice into portions and you're done!
*NOTE: If you are comfortable doing so, you can start this method by pan searing the top and bottom on the stove in some high temp olive oil. Gives it a great seared flavor if you're ok giving it a go!
Smoked (tastiest of course!):
You're gonna get a savory, beefy, smoky flavor that you will never ever tire of!
- Run your smoker at 275° to 300°
- Place your chuck roast on the smoker and let it smoke for 1 hour
- Check temperature and spritz with apple juice (will finish at 125° internal temp)
- Apply additional EPS and Beef Rub as desired
- Check temp and spritz every 30 minutes until you reach an internal temp of 125° on your chuck roast
- Remove and let the chuck roast rest on a plate for 10 to 20 minutes to cool and finish cooking
- Slice into portions and you're done!
- OH YEA! If you're not worried about carbs from sauce, you can sauce the chuck roast with your favorite BBQ sauce at 115° internal temp, then continue to smoke while that sauce tacks up
And there you have it, 3 incredibly delicious, and simple ways to turn a beef chuck roast into several flavor filled meals!
